1 Cup Dates
4oz Manchego cheese, sliced into 1 inch chunks
5 slices Jamón, sliced into 3 inch pieces
1/2 Cup Olive oil for frying
On a cutting board, take a sharp paring knife an slice date 3/4 down the middle to remove pits.
Take 1 inch chunks of manchego cheese, and stuff 1 into each date.
Wrap each stuffed date with 3 inch slice of jamon. Use toothpick to secure jamon around date.
In a heavy skillet, heat olive oil until hot but not smoking (the oil on the very bottom of the pan should look squiggly). Add dates in batches and fry on each side about 2 minutes. Remove dates from oil, and set on a papwer towel covered plate to absorb excess oil.
Let cool about 2 minutes, serve and enjoy.
