Maple Syrup Caramelized Potatoes


6 yellow potatoes cut into 4
6 red potatoes cut into 4
75 ml (1 / 4 cup - 4 tbsp.) maple syrup
45 ml (2 tbsp.) vegetable oil
45 ml (2 tbsp.) cider vinegar
60 ml (1 / 4 cup - 4 tasp.) chopped chives
salt and pepper to taste

Preheat oven to 375°F (190°C).
Mix all ingredients.
Place potatoes in a shallow dish.
Sprinkle with salt and pepper.
Cover with foil and bake about 40 minutes. .
Remove the foil and continue baking 10 minutes or until potatoes are cooked.
Servings: 4-6
