90g (1 cup) oatmeal
120g (1 cup) all purpose flour
120 g (1 1/3 cups) coconut
70 g (½ cup) brown sugar
180 g (3/4 cup) melted butter
5 ml (1 tsp.) baking powder
1 ml (1 / 4 tsp.) salt
1 can (300ml) sweetened condensed milk
125 ml (1/2 cup) lemon juice
Preheat oven to 350°F (180°C).
Prepare a baking dish 23 by 23cm ( 8” x 8”) with parchment paper.
In a large bowl, combine flour, oatmeal, coconut, brown sugar, salt and baking powder.
Pour the melted butter and mix well.
In another bowl, combine sweetened condensed milk and lemon juice.
Pour half the mixture into your baking dish, pressing lightly.
Add all the lemon mixture.
Place the remaining mixture of coconut, pressing lightly.
Bake approximately 30 minutes.
Remove from oven and cool 30 minutes before cutting into squares.
