Ingredients:
- 2 cups cornmeal
- 2 cups very hot water
- 2 cups all purpose flour OR 1 cup oat flour and 1 cup all purpose flour
- 2 cups yogurt or buttermilk
- 2 teaspoons baking soda
- 2 teaspoons ground gray or Celtic salt
- 1/4 cup honey, silan, or ribbon cane syrup
- 4 eggs
- 1/4 cup melted palm kernel oil (unhydrogenated vegetable ghee), ghee, butter, or lard
- an additional 1/8 cup grease for the pan
