Tomato, Basil and Mozzarella Salad

4 medium  tomatoes, cut into bite sized pieces                   
4 ounces mozzarella cheese, cut into bite sized cubes
1 clove garlic, minced         
1/2 cup chopped fresh basil                                   
1/4 cup olive oil                                        
1/2 teaspoon salt
dash pepper     

Combine all ingredients in a medium bowl.
Serve chilled.

Serves 4

NOTE: for a non-dairy version substitute 1/2 (15 0z) can of Great Northern Beans (or other white beans) , drained and rinsed for the mozzarella.
