Pumpkin Pie Mousse

1 small package (4 serving size) package instant vanilla pudding
1 cup milk
1 cup canned pumpkin (not pie mix)
1 teaspoon cinnamon
½ teaspoon ground ginger
1 cup heavy whipping cream, whipped
1-2 tablespoons sugar (I used 1 tbsp but you may like it sweeter)
whipped cream and chopped nuts for topping

     Combine pudding mix, milk, pumpkin, cinnamon, and ginger in a medium bowl.  Mix with a wire whisk or electric mixer until well blended.  Fold in whipped cream and sugar.  
     Refrigerate at least one hour to blend flavors.  Spoon into serving bowls and top with desired toppings.

Serves 4-5.
