Ingredients :
500 gm Mutton or Beef
250 gm Any Vegetable ( eg. brinjal, pumpkin ... )
1 small ball Tamarind ( the size of a lime )
1/2 Coconut ( see Notes below ).
9 flakes Garlic ( Lasan )
2 table sp Cooking oil
1 table sp Bottle Masala
2 cups water
1/2 tea sp Salt ( adjust amount to taste )
Instructions :
Cut mutton/beef into small ( about 1 inch ) pieces. Cut vegetable.
Soak tamarind in water for at least 10 minutes. Extract juice/pulp by squeezing.
Extract the juice from the coconut to get 1 cup thick juice and 2 cups thin juice.
Cook the mutton/beef with minimum quantity of water ( to avoid making the curry too thin ) in a pressure cooker until almost done. Preserve the liquid in the cooker.
Peel garlic flakes and crush with the back of a spoon.
In a heavy bottom sauce pan heat oil.
Add the crushed garlic flakes and fry until garlic is soft.
Lower heat and add the Bottle Masala, fry for a minute.
Add the cooked mutton/beef pieces and stir fry on medium heat for a few minutes.
Add water from the pressure cooker, the vegetable pieces and the thin coconut juice, simmer till the mutton/beef and vegetable are cooked.
Add tamarind pulp/juice, thick coconut juice and salt.
Bring to a boil and remove from heat.
