Brown Rice Pudding with Strawberries

Makes 2 generous servings

1 cup cooked brown rice
1 cup low fat milk
1/4 cup sugar
1/2 teaspoon grated lemon zest
1/2 teaspoon warm cinnamon
Pinch of salt
Fresh strawberries, sliced for serving

In a large saucepan over medium low heat, combine the rice, milk, sugar, lemon zest,  cinnamon and salt. Cook, stirring continuously until the mixture is thick and creamy, about 15-20 minutes.

Serve warm, topped with strawberries.
