Dr. Parag Prakash Sutar is working in the area of food engineering with specialization in thermal processing and drying of agricultural, food and marine products. He has developed advanced food processing techniques, equipment and published papers in the peer-reviewed international journals

1.Drying and dehydration of agricultural, food and marine products

Osmotic dehydration (Fruit candy: Amla, pineapple etc.), Microwave vacuum drying, Microwave-convective drying, Solar cabinet drying, Freeze drying, Heat pump drying, Hybrid drying techniques

2. Conjugate heat transfer (microwave/IR radiation and convection) in food drying and                           sterilisation of agricultural materials.

3.Modeling thermal process

             Mathematical modeling and optimization of Canning, Retort pouch processing and Aseptic   processing operations

             Mathematical modeling and optimization of  spices processing operations

4.Design and development of microwave dryers and sterilizers for foods

1.Delivered expert lectures along with faculty from USA in industrial workshops on “Thermal Sterilization Technologies for Foods/Food Preservation and Thermal Processing Techniques/Advanced Dehydration Technologies for Foods,” organized in December, 2010-11.
