Cheesecake ~ Randy's Heavenly


Four--8oz. packages of Cream Cheese
1/2 cup graham cracker crumbs
1 cup sugar
3 egg whites
2 whole eggs
1 teaspoon vanilla flavoring

Preheat oven to 325 degrees

This recipe is a little bit different in that you don't make the crust with melted butter, you simply do the following:

Grease the bottom of a 9" Spring Form Pan
Sprinkle with the graham cracker crumbs

Beat sugar and vanilla in stand mixer on medium speed. Add Softened Cream Cheese mixing well,
Add the 3 egg whites, mix well. Add whole eggs, one at a time, mixing just until blended. Pour into pan.
Bake 45-50 minutes or until almost set.
Run a knife or flat spatula around the edges before removing rim of pan
Refrigerate for 4 hours or more "Before digging in as he put it!" The man loved his cheesecake and it was pretty good!
