The St. Croix Sheep are an American breed of sheep developed from a strain of Caribbean hair sheep. These sheep are well adapted to heat and humidity, and do well in the Southeast United States. They are excellent foragers, and are able to make good use of native pastures. They have an increased level of parasite resistance and their hair coat sheds naturally, avoiding the need to shear. While their numbers are increasing, they are still rare. St. Croix Sheep are listed as threatened on the American Livestock Breeds Conservancy's Conservation Priority List.
The St. Croix Sheep were developed as a low input meat breed, and not for wool. Because of this, their tender meat has a sweet aroma and delicate taste, that has earned them a spot on the Slow Food Ark of Taste.
