Tomato Cucumber Salad

2 tomatoes, chopped
2 cucumbers, chopped
1/4 onion (preferrably Vidalia), chopped fine
1 t. Dijon mustard
1/4 c. White Balsamic or apple cider vinegar
1 T. sugar (2 T. if using apple cider vinegar)
1/4 t. salt
1/4 t. pepper
1 t. fresh basil chopped
1 T. fresh chives, chopped
1/4 c. olive oil

In medium size bowl, whisk together mustard, vinegar, sugar, salt, pepper and herbs.  Drizzle in olive while whisking to emulsify.  Add tomatoes, cucumbers and onions.  Let marinade in dressing in refrigerator for at least 30 minutes.
