The All American Burger

2 pounds ground chuck
1 lb. bacon, sliced in 1/2 inch pieces
6 burger buns
1/2 c. Greek yogurt
2 cloves garlic
1 t. salt
1/2 t. pepper
6 1 1/2 inch pieces (1/8 in. thick) smoked cheddar cheese
2 large onions, sliced
1/2 t. sugar
1/2 t. salt
1/4. t. pepper
1 T. balsamic vinegar
Cut up bacon and saute over medium heat until crisp and browned, but not blackened. Reserve 1 tablespoon of bacon grease in pan to cook onions and drain bacon pieces on paper towel to cool.  Mix meat, yogurt, garlic, salt, pepper and drained (cooled) bacon together and cut into 6 equal parts.  Cut each part in 1/2 and then halve again.  Form two equal size balls by rolling in hands, then flatten each piece. Place one square of cheese in center of bottom patty and top with 2nd patty.  Press edges firmly together to thoroughly enclose cheese.  Grill 10 minutes flipping once halfway through cooking.  

To Cook Onions:  
Cook onions over medium heat in same pan that you reserved bacon drippings in. Add in sugar, salt and pepper and balsamic vinegar.  Saute, stirring often until browned and carmelized.  Spoon onions over burgers, and top with a drizzle of your favorite BBQ sauce.
