Sun-Dried Tomato & Goat Cheese Puffs

(Adapted from Pampered Chef Easy & Impressive Appetizers
2/3 c. water
3 T. butter
1 t. fresh chopped thyme or 1/2 t. dried
1/2 t. salt
1/4 t. pepper
2/3 c. flour
2 eggs

For the Filling:
4 oz. goat cheese
4 oz. cream cheese
1 T. milk
1/2 c. sun-dried tomatoes in oil, patted dry

Preheat oven to 375º.  Heat water, thyme, salt and pepper in saucepan over high heat.  When it boils, add flour and mix like crazy, one minute, or until dough pulls away from side of pan and forms a ball.  Spoon into bowl, add eggs and whisk till smooth.  Spray mini-muffin pan and scoop into wells.  Bake 22-25 minutes or until deep golden brown.  Cut slit in each muffin and squirt filling inside.

Filling Instructions:  Combing all with electric mixer until smooth.  Pipe into center of each muffin with pastry bag or ziploc bag with corner snipped off.
