Smashed Potatoes

red potatoes - 5 lb. bag
1 stick of butter
1 container sour cream 16 oz.
2 c. cheddar cheese, grates
1 small package real bacon bits or 1 lb bacon, cut it pieces and fried
2 green onions, chopped
1 c. milk
1 T. salt
1 t. pepper

Cook potatoes in water in pot about 30 minutes or until fork comes out easily.  Mix remaining ingredients together using a potato masher.  Keep potatoes coarsely mashed.  Serve immediately or put in baking dish to use another day. If baking another day, bake at 350 for 30 minutes.
