Simple Soba Noodles with Sesame Peanut Sauce

one 8 oz package of Soba Noodles (or wheat or white pasta of your choice)
3/4 c. peanut butter
1/4 c. rice wine vinegar
2 T. brown sugar
2 cloves garlic, minced fine
1 T. sesame oil
pinch of chili flakes
1 t. grated fresh ginger
1/8 c. olive oil (Just use 1/2 of your 1/4 cup if you don't have one)

Cook soba noodles according to package directions.  Drain.  If chilled salad is preferred, drain and rinse under cold water.  If hot, simply drain.  Mix next 7 ingredients together in bowl with whisk until well blended and creamy. Drizzle olive oil and whisk until desired thickness.  (I use all).   Pour over noodles.  Sauce can be heated in microwave for about 60 seconds if warm noodles are preferred.  It's delicious both ways! Add any chopped veggie of your choice and chicken for a great healthy meal!
