Rosemary Garlic Accordion Potatoes

Serves 8
8 Yukon gold potatoes (one per person)
6-8 garlic cloves (one clove per
1/4 c. olive oil
1 T. salt
1 t. pepper
1 T. fresh or dried rosemary
Slice potatoes from top to bottom but not cutting through all the way (just barely before you hit the skin) and slicing as thin as possible.  Slice garlic into thin slices and stick a wedge in 3 equally space wedges - one in the center and one toward each end.  Liberally brush all over potatao with olive oil and sprinkle with salt , pepper and dried rosemary. If using fresh rosemary, chop and sprinkle over freshly baked potatoes.  Experiment with different seasonings like thyme or basil.  Switch out the garlic for bits of onion.  Sprinkle with cajun seasoning for a spicy twist.  Dollop on some sour cream and sprinkle with chives.  There's no limit!
