Roasted Honey Balsamic Glazed Carrots

1 pound carrots, peeled and quartered (long pieces)
2 T. olive oil
1/4 t. salt
dash of pepper
2 T. balsamic vinegar
1 T. honey
Preheat oven to 425º.  Place carrots in single layer on lined cookie sheet and drizzle with olive oil.  Sprinkle with salt and pepper.  Toss to coat all carrot surfaces.  Place in oven and roast, uncovered about 25 minutes.  While roasting carrots, either heat balsamic and honey in a small bowl in microwave or small skillet over low heat until honey melts and mix together with vinegar.  Brush this mixture over carrots after 25 minute of roasting and return to oven an additional 3-4 minutes.
