Pasta Fagioli Soup

2 T.olive oil
1 pounds ground mild Italian sausage or ground beef
1 medium onion, chopped fine
1 c.carrots, chop fine
1 c. celery,chopped fine
24 oz. diced canned tomatoes
1 can Red Kidney beans
1 can Cannellini Beans
1 box Beef stock
2 cloves garlic, chopped fine
1 t. red pepper flakes
2 T. Italian seasoning
1 t. salt
1/2 t. black pepper
2 T. chopped fresh parsley (for garnish)
24 ounces Spaghetti sauce or 24 oz tomato sauce
8 oz. box small shell pasta
1/2 c. shaved or grated parmesan cheese

Preparation: Sauté sausage or beef in oil in large pot until browned. Add onions, carrots, celery and tomatoes and simmer for about 10 minutes. Drain and rinse beans and add to the pot. Also add beef stock, Italian seasoning, pepper,salt. red pepper flakes, tomato sauce, and pasta. . Simmer until celery and carrots are tender, about 45 minutes. Garnish with chopped parsley and shaved parmesan.
