Pancetta & Tomato Bibb Lettuce Salad with Bleu Cheese Dressing

4 pancetta rounds, or 6 slices of bacon
½ cup sour cream
3 T. milk
2 T. cider vinegar
1 scallion (or green onion) chopped
1 cup crumbled blue cheese
1 head Bibb or Boston lettuce
6-8 grape tomatoes, halved

Cook pancetta in sautee pan over medium heat until crisp, about 10 minutes. Remove to plate. Whisk together next 5 ingredients. Arrange lettuce on plates. Spoon dressing over lettuce. Sprinkle tomatoes over top along with crumbled pancetta or bacon.
