No Fail Hollandaise Sauce

3 egg yolks
2 t. lemon juice
1/2 t. salt
1/4 t. cayenne or white pepper
1 stick butter
Dump egg yolks into blender and add lemon juice, salt and pepper.  In microwave safe dish, microwave butter just until melted or melt in pan on stove but do not brown!  Turn blender on low and slowly drizzle in butter to emulsify.
