Mom's Parsley Potatoes

INGREDIENTS:
10-12 russet potatoes, peeled and cut into bite size chunks
1 medium onion, diced
3 garlic cloves, minced
1 1/2 sticks butter (3/4 cup)
1 t. salt
1/2 t. pepper
1 c. fresh chopped parsley or 2 T. dry
 
DIRECTIONS:
Preheat oven to 350º.  Put first 3 ingredients into a large pot of water.  Bring to simmer and cook 10-20 minutes or until potatoes are tender but still firm.  Drain and put all back into pot.  Mix with butter, salt, pepper and parsley.  Put in oven-safe baking dish and bake in oven to 20 minutes.
