Masa Cakes (Sopas)

INGREDIENTS:
2 c. masa harina
1 1/4 c. warm water
1/3 c. queso fresco cheese (or substitute parmesan or romano)
1 egg yolk
2 T. butter
1 t. baking powder
1/2 t. salt


DIRECTIONS:
Preheat oven to 350 0186.  Mix masa, cheese, baking powder and salt in a mixing bowl. In small bowl whisk together water and egg yolk.  Add to dry mixture. Soften butter and whisk into dry ingredients, Add water slowly and mix well. Form into 8 balls and smash flat with glass bottom. Lightly spray baking dish or place on parchment paper lined baking sheet.  Bake for 15 minutes.
