Maryland Style Crabcakes

1 pound crab meat (claw or lump)
2 slices white bread
1 t. Old Bay Seasoning
1 egg, beaten
2 T. mayonnaise
1 t. hot sauce
1 heaping T. stone ground or Dijon mustard
1 T. Worcestershire sauce
1 c. panko bread crumbs
1/4 c. olive oil (if frying)

Preheat oven to 375º (if oven baking).  Pick through crab to make sure there are no pieces of shell.  Pulse bread in food processor to make fine crumbs.  Add crumbs and Old Bay to crab.  In a separate bowl, crack in the egg and next 4 ingredients.  Mix well until lumps are smoothed out.  Pour into crab mixture.  Mix with hands very gently just until combined.  Form into patties and put on cookie sheet.  Chill at least one hour.  Fry for 3 minutes on each side in frying pan in olive oil or bake for 15 minutes in oven, then flip and bake an additional 15 minutes.  Serve with Garlic Old Bay Aioli. (See below).

Garlic Bay Aioli
Mix 1/2 c. mayo, 2 finely chopped garlic cloves, and 1/4 t. Old Bay Seasoning together in small bowl.  Serve with crab cakes.  Garnish with chopped parsley and/or chives.

** Experiment with finely chopped celery, red pepper, etc in your crab cakes for a different flavor and texture.
