Lemon Oregano Roasted Potatoes

2 pounds small red potatoes, cut in half
1/3 c. olive oil
1 large lemon, juiced and zested (reserve 1/2 for garnish)
2 cloves garlic, minced or pressed
1/2 c. fresh oregano (2 T. chopped) or 2 t.. dried (reserve 1/2 for garnish)
1 t. salt
1/2 t. black pepper
Preheat oven to 400º.  Line baking sheet with foil, parchment paper or Silpat mat.  Cut potatoes in half.  In a large bowl, mix next 4 ingredients together.  Dump in potatoes and toss gently to coat.  Spread in one layer on baking sheet and sprinkle with salt and pepper evenly.  Bake for 30-40 minutes until potatoes become browned on the edges but still soft inside.  (Time will vary due to size of potatoes and ovens).  Taste and sprinkle with additional salt and pepper to taste.
