Turkey Roulades with Cider Gravy

8 turkey breast tenders
1 Granny Smith apple, cored and roughly sliced
1 cup fresh cranberries
1/2 medium yellow onion
2 cloves garlic
1 c. plain breadcrumbs
1 T. fresh sage, chopped
1 T. fresh rosemary, chopped
1 c. finely chopped walnuts
2 t. salt
1 t. t. pepper
10-12 slices bacon

Preheat oven to 400º. Slice each turkey tender in half but not all the way through, opening it as if it were a book. Sprinkle each with salt and pepper and remove to platter.  In food processor, add in apple, cranberries, onion, and garlic. Pulse until small chunks form.  Add in sage, rosemary and breadcrumbs.  Pulse 6 or 7 times or just until herbs and chopped.  Spread 1/2 cup over inside of each turkey tender leaving 1/4 inch on edge for rolling up.  Sprinkle 1/8 cup or 2 Tablespoons of chopped walnuts over spread on each turkey tender. Carefully roll up tender tucking in any filling.  Cut 12 pieces of bacon into thirds.  Lay pieces of bacon over each rolled tenderloin roll using about 4-5 per tender. Secure with toothpicks or kitchen twine and place in sprayed baking dish and bake for 1 1/2 hours.  drizzle with Cider Gravy. (Recipe follows).

Cider Gravy

2 T. olive oil
1/4 yellow onion, chopped finely
2 cloves garlic, minced
2 cups chicken stock
1 c. apple cider
1 T. apple cider vinegar
1/2 t. salt
1/4 t. pepper
1 T. cornstarch
1 T. water

Saute onion in olive oil over medium heat about 4 minutes. Add garlic and cook another minue.  Add chicken stock, cider and vinegar along with salt and pepper and simmer until reduced by one half volume.  In small bowl combine cornstarch and water.  Add to pan and whisk vigorously for 3-4 minutes allowing mixture to thicken. Drizzle over Turkey Roulades.
