Garlic Basil Mayonnaise (Aioli)

INGREDIENTS:
4 extra large egg yolks
1 1/2 T. lemon juice (fresh)
1 clove garlic, minced (omit for plain mayo only)
3/4 t. salt
1/2 t. pepper (white if making plain mayo only)
1 c. canola or vegetable oil
1 c. olive oil
(use 2 cups olive oil for heart healthy)
1 c. fresh basil

DIRECTIONS:
In a food processor, add in all ingredients.  Pulse for about 20 seconds.  Add in one cup of oil at a time, drizzling very slowly through opening in top of food processor.  Check after one and one half cups for thickness, adding more if needed.  Add too much and it will thin again so be careful.  Roughly chop basil and add in and whiz for about 30 more seconds.  

THE SANDWICH:
Butter 2 slices of bread on one side only.  Toast on griddle or frying pan just until golden brown.  Top one slice of bread with 2 slices of bacon broken in half (or more if you love bacon!), thinly sliced fresh tomatoes and some spring mix lettuce leaves.  Slather other slice of bread with Garlic Basil Mayo.  For added bonus add some thin slices of avocado.  Delicious!
