Deconstructed Guacamole Bruschetta

2 Hass fully ripe avocados
8 sprigs cilantro
2 thin slices red onion
1 jalapeno, minced
2 cloves garlic, halved
olive oil
8 slices artisan bread
Optional: Cotiza cheese crumbles

Drizzle olive oil on one or both sides of toast. Place on hot grill or bake at 400º in oven (until lightly browned). If grilling, grill until char grill marks are on one side, then flip.  When bread is done, rub top side with cut clove of garlic while still hot. Lightly mash avocado with salt and pepper and spread over toast. Sprinkle with red onion and jalapeo and lay one sprig of cilantro over top.
