Chicken Parmesan Cups

INGREDIENTS:
4 chicken breasts, cubed
1 c. shredded mozerella cheese
1/2 c. chopped onion or about 1 medium onion finely chopped
2 garlic cloves, minced

tomato sauce
1/2 c. Italian Bread Crumbs
fresh basil
fresh oregano
garlic
salt
pepper
olive oil

DIRECTIONS:
Preheat oven to 350º.  In skillet add olive oil  and bring to medium heat.  Sprinkle Chicken with salt and pepper and saute in olive oil until browned, about 7 minutes.  removed to large bowl and add cheese, and mix well.  Add 2 more tablespoons olive oil and chopped onion and sauted about 3-4 minutes until softened.  Add garlic and stir one more minute.  Add in tomatoe sauce, salt and pepper  and cook 5 minutes.  Lightly spray 8 cups of a muffin tin with baking spray.  Spoon in chicken mixture to 3/4 full in each muffin cup.  Top with 2 tablespoons of tomato sauce.  Sprinkle with about 1 tablespoon cheese an 2 tablespoons of bread crumbs.  Drizzle tops with olive oil.  Bake for 15 minutes.  Remove from muffin tins and sprinkle with fresh chopped basil.
