When chips are completely melted, stir in the peppermint extract.  and candy canes. Add in 1/2 cup of peppermint crumbles and mix thoroughly to evenly distribute candy. Spread evenly in the bottom of the prepared pan.   Add and 2 drops of red food coloring.  Take a knife and swirl it through a drop at a time and swirl just a bit throughout the pan.  If more color is desired, add one drop at a time and swirl some more with the knife.Sprinkle remaining candy over top of fudge.

Chill for 2 hours, then cut into squares. (For a festive touch, use the empty can in a round cake pan. Pour fudge around it to make a wreath. Let cool ..decorate)
