Buttermilk Ranch Twice Baked Potatoes


½ cup sour cream
2/3 cup real bacon bits
2 chopped green onions
½ cup shredded cheddar cheese
½ cup buttermilk
1 envelope Hidden Valley Ranch dry ranch dressing mix
½ teaspoon salt
½ teaspoon pepper
6-8 medium size baking potatoes


Preheat oven to 375º. Bake potatoes directly on oven rack (no pan) for an hour. Check for doneness by inserting a fork. It should come out easily. When potatoes are done, slice in half lengthwise.
For filling – mix first 8 ingredients together in a mixing bowl. When potatoes are done, slice in half, scooping out innards, leaving a bit for support. Put potato insides into other mixture. Mash with a potato masher until pretty creamy. Spoon back into potato shells and bake for 15 minutes in a 375º oven. Remove and enjoy!
