Slow Cooker Oatmeal

Instant packet oatmeal isn’t the greatest. To make it quick cooking and microwave friendly, a lot of the packets contain artificial flavors and sweeteners. Steel cut oats are a must here. The pellet shaped grains maintain a chewy texture even after being slow cooked overnight. Just wake up, and eat.

* Serves 8
6 Weight Watchers Points per serving (approx.)

8 cups water
2 cups steel cut oats
1/3 cup raisins
1/3 cup dried apricots, diced
1-1/2 teaspoons cinnamon
3/4 teaspoon kosher salt
1/2 cup brown sugar

  • Combine all ingredients (except for the apricots) in a slow cooker. Cook on low for 6 hours. Add the apricots, stir well and serve. 

Tips & Tricks

  • I highly recommend using plastic crock pot liners for this. No need to soak and scrub the pot in the morning.

  • Leftovers can be brought back to life in the microwave and enjoyed for the next few days by adding a slash of water to the bowl, covering it in plastic wrap and reheating. 
  • I like the textural contrast of having half of the dried fruit cook with the oats and half added at the end, but feel free to cook everything together if you prefer.
