Mashed Cauliflower

Every commercial diet plan out there tries to pawn off mashed cauliflower as an undetectable substitute for mashed potatoes. While this side dish absolutely tastes like its vegetable namesake, it's a clever way to get the same creamy experience that comes from eating mashed potatoes without the starch.

* Serves 4
1 Weight Watchers Point per serving (approx.)

1 head of cauliflower florets
3 tablespoons low sodium, fat free chicken stock (more may be needed to reach desired consistency)
2 tablespoons parmesan cheese
Kosher salt and freshly ground black pepper

  • Place the florets in a steamer basket over boiling water. Cover and steam until very tender, about 10-15 minutes. 
  • Drain well and transfer cauliflower to a food processor.
  • Add the chicken stock, and parmesan cheese.
  • Puree until smooth.
  • Add additional chicken stock if necessary.
  • Season with salt and pepper to taste.

Tips & Tricks

  • If you don't have a steamer, you can boil the cauliflower in salted water.
