This sweet and tangy salsa is perfect on top of grilled chicken or pan-seared fish.
* Serves 4 to 6
1 mango, peeled and diced
1/2 cup peeled, diced cucumber
1 tablespoon minced jalapeno, seeds and ribs removed
1/3 cup diced red onion
1 tablespoon lime juice (or white vinegar)
1/4 cup chopped, fresh cilantro
Salt and pepper
- Combine all ingredients. Season with salt and pepper to taste.
