Hummus Flatbread


I like to make this flatbread when I find myself flying solo for dinner. If you get into the habit of keeping an extra ball of pizza dough in the freezer, you can always whip up a quick meal with some staple refrigerator ingredients. You can easily swap out the tomato and basil for whatever leftover veggies you have on hand.

* Serves 4
7 Weight Watchers Points per serving  (approx.)

1 ball of whole wheat pizza dough, cut into 4 pieces 
1 cup of hummus, any flavor
2 vine ripened tomatoes, thinly sliced
2 tablespoons fresh basil, chopped
Kosher salt and freshly ground black pepper

  • Preheat oven to 500 degrees.
  • Roll each of the four balls of pizza dough flat with a rolling pin. Place on a cookie sheet or pizza pan/stone.
  • Bake about 10 minutes or until crisp.
  • Spread 1/4 cup of hummus onto each flatbread and season with salt and pepper.
  • Top with tomato and basil. Cut into wedges to serve.

Tips & Tricks

  • You can also toast pita bread in place of the pizza crust. 

  • If your pizza dough is frozen, quickly thaw it by wrapping in a zip-lock bag and submerging in a bowl of hot water.
