Eggs in Purgatory


This dish is my response to hectic weekday nights that leave me out and about until after 8PM. Poached eggs in spicy tomato sauce can be on the table in literally five minutes. To stay carb free, I serve mine on top of a bed of sauteed escarole and white beans. But, a side of crusty Italian bread would be the perfect splurge accompaniment. If this is what Purgatory is all about, I wouldn't mind hanging there for a while. 

* Serves 2
8 Weight Watchers Points per serving (approx.)

4 large eggs
1 1/2 cups pasta sauce (homemade or jarred)
1/4 teaspoon crushed red pepper
1 tablespoon fresh basil, chopped

  • Heat a large skillet on medium high.
  • Add the tomato sauce and crushed red pepper to the pan. 
  • Cook until the sauce comes to a bubble. 
  • Crack the eggs into the sauce. 
  • Cover with a lid or aluminum foil and cook until the whites set. Approximately 3 minutes for runny yolks and 5 minutes for cooked yolks.
  • Top with fresh basil.

Tips & Tricks

  • Opt for a protein packed meal after a strenuous workout. It helps to rebuild muscle that was broken down during exercise.
