Grilled Chicken Marinated in Greek Yoghurt

2 butterflied chicken breasts
1/2 cup Greek Yoghurt
1/4 fresh lemon juice
2 tsp salt
1 tsp coarse black pepper
1 cup fresh chopped Italian parsley
1 small head of garlic (smashed)
Rind of two lemons

Combine all ingredients and marinate in the fridge for at least an hour.  Turn grill onto high and when it's nice and hot, put the chicken on.  Lower to medium and shut the lid, cooking the chicken for about 40 minutes.  Be sure to let the chicken sit on the grill for a while before turning it - this will give you good grill marks.
