Avocado salad
Ingriedients: Cilantro, Avocado, Red Peppers, Tomato, Radish, Red Onion,  Cotja cheese, Lime juice, Olive oil

Light fresh and yummy!  Blend dressing : make extra for another day
Dressing: 1/4 cup Olive Oil
1/4 a cup of cilantro fresh chopped
1/2 or whole lime juiced.
Garlic powder and salt dashed.
blend ingridients in food processor or blender.
cut veggies and dress your avocado, drizzle dressing and cheese. Yum! Clean Eating menu

Baja Fish and Southwest Quinoa Salad

Baja Fish(use your favorite white fish)
6 fillets
Baja or Chipolte type seasoning, season to the fish and grill or broil in the oven
Quinoa, cook as directed.  when finished let cool, room temp.  
1/4 cup of oil either olive or grape seed
1/2 can of black beans drained
1 TBSP of cumin powder added to quinoa
Cilantro 1.4 cup.
1/2 red onion
mix and sprinkle cotjia cheese on top
on the side serve avocado and pico.
pineapple spear
