Zucchini & Mint Pasta with Parmesan

Zucchini & Mint Pasta with Parmesan

serves 4


7 large zucchini or approximate equivalent - grated

1/2 cup (a packed 1/2 cup) fresh mint - chopped finely

3 garlic cloves diced

4 TBS olive oil

1/2 to 1 tsp salt

1/2 to 1 tsp pepper

1 cup grated Parmesan

4 Servings homemade fettucini OR 1 lb dried angel hair.

Parsley - chopped for garnish

Get your water boiling for the pasta.

While the water heats, grate the zucchini on a cheese grater or in your food processor.  Heat the olive oil in a large saute pan & toss in the garlic.  After a few seconds, add the zucchini.  Add the salt & pepper & saute for 2-3 minutes - or until the zucchini softens.  Remove from heat.

Drop your pasta into the water & cook.  Drain the pasta & put it in a large serving bowl.  Add the zucchini mix, the Parmesan & the fresh mint  Mix very well.  Serve and add a little extra grated cheese & the chopped parsley as garnish.
