Lemon Basil Pasta with White Cannellini Beans


1 lb dried pasta OR 4 servings of homemade pasta (http://delightfuldeliciousdelovelyblog.wordpress.com/2012/07/12/homemade-pasta-fettucini-noodles-23/

2 cups packed fresh basil leaves

1 lemon - to make 1 TBS lemon zest & for juice (Get a good zester.  Makes life so much easier.  http://tazstore.com/Home-and-Kitchen-Products/microplane-classic-zestergrater-40020?language=en&currency=USD)

1 cup grated Parmesan

4 TBS olive oil

1 19 oz can white beans - drained

Salt & Pepper to taste

Shaved Parmesan & basil for garnish

Heat the olive oil in a small pan over medium heat.  Add lemon zest & stir for 1 minute, or until lightly golden.  Be careful not to burn the fragile zest.

In a food processor combine cooked lemon zest & olive oil, basil, the juice from half the lemon, the Parmesan & 1/2 teaspoon each of salt & pepper. Cover and process until smooth.  Add water 1 TBS at a time if the mix is too thick to puree.

Cook your pasta according to package instructions.  About 3 minutes before the pasta is done - add the drained can of white beans to the pasta.  If you are using homemade pasta - add the beans to the boiling water at the same time as the pasta.

Drain the pasta & toss with the basil lemon mix.  Garnish with shaved Parmesan, fresh ground pepper, basil & a slice of lemon to squeeze for additional lemon flavor - if desired.
