Kitchen Sink Breakfast Pizza


A large handful fresh spinach

A large handful fresh arugula

A handful of grated Parmesan

olive oil

salt & pepper

6 eggs – (5 for scrambling – 1 for baking)

A dollop of milk

Lots of grated cheddar & mozzarella mix

Chopped parsley & cilantro

1/4 to 1/3 prepared pizza dough recipe


Preheat the oven to 450 degrees

Roll the dough out on a floured surface then place on a greased cooking/pizza sheet. Score the dough with a sharp knife to prevent bubbling up in the oven.

Toss the greens with a little olive oil, salt & pepper & grated Parmesan. Arrange them on top of the dough & bake in the oven until the crust JUST begins to brown. Meanwhile – whisk 5 eggs with milk & grated cheddar & mozzarella cheese & a little salt & pepper. Scramble these in a pan leaving them just a little under done. Take the pizza from the over & spread the wet-ish eggs over the greens. Add a large handful of grated cheddar & mozzarella. Return to the oven & bake until it seems about 2–3 minutes from being ready. Take it out – crack an egg in the center of the pizza & return it to the oven. The whites should look pretty much done before you remove it from the oven but know that if they look a teensy bit underdone – that is actually better. The egg will keep cooking once the pizza is out of the oven & whatever whites are under-cooked will cook once you start slicing this pizza up. The broken yolks & whites add a lovely, creamy element to any pizza you choose to add a baked egg or two to.

Top with chopped cilantro & parsley & serve!
