Turkey soaking in Apple Cider Marinade
Turkey soaking in Apple Cider Marinade
Turkey Soaking in an Apple Cider Marinade. This is probably the simplest and easiest way to prep a turkey. I've been doing this for the past 3 years and I have never had a turkey come out juicier then when it is soaked in an apple cider marinade and then cooked on a grill (provided you have a grill large enough, and enough propane for that matter) Depending on the size of the Turkey and the kettle you will need: 1-2 gallons of apple cider (if you have a local orchard that still makes non-pasturized cider it's best to get that, it gives the best flavor) Ground Cinnamon Fresh juice from 6-8 Lemons 2 cups of Apple Cider Vinegar Garlic Powder (just a little) 2 chopped cloves of fresh garlic Fresh Basil Sea Salt (coarse grain preferably) or Kosher Salt Whole dry Bay Leaves Typically I spice the Apple cider first with cinnamon till it has a little tang then add the lemon juice with some fresh basil, chopped garlic, and about 2 teaspoons of garlic powder with the apple cider vinegar. Stir till all the contents are well mixed and no clumps of cinnamon are left floating to the top. From that point I will add sea salt till it's just slightly saturated. The marinade should be dominated by the taste of Apple Cider and cinnamon, with a slight tang from the lemon juice and vinegar, a slight aroma from the garlic and basil with a slight to medium salty aftertaste. From that point I drop the still frozen turkey and allow it to soak and defrost over night. Now, the final step for this marinade is to add roughly 2 spice contains full of bay leaves on the top. This helps to cover the turkey and the bay leaves leave a very nice aroma as the turkey soaks over night. The turkey should be allowed to soak for 24 hours with the last hour or two sitting outside of the fridge. From this point it's on to the grill It's a good idea to keep the grill around 325'F if you can. So preheat the grill well before placing the turkey on it with an open roaster. The marinade that eventually falls out of the turkey as it cooks is excellent to baste the top. It's best to keep some spare cider on hand to baste with so to keep the turkey nice and moist. it will take a good 4-5 hours too cook....but once the deep parts of the turkey (the thigh is a good place to check) reach 180'F it's ready to serve Happy Thanksgiving!

***Important Fresh Turkey - I used a fresh turkey. It was not frozen. Frozen Turkey - If you are cooking a frozen turkey, make sure you defrost it in your fridge. Allow 5 hrs per pound. Another quick method is covering the turkey with cold water in the sink. Changing the water every 30min. Allow 1 hour per pound. Start early in the morning, if you plan on having a dinner at a normal time. The time in which you start cooking will depend on the size of your turkey, the time you plan to have dinner and also the temperature of your oven. I started cooking my turkey at 10:30am, it was a 15lb turkey and it was done by 6pm. Step 1: Prepare the turkey by removing giblets and neck. Rinse and wipe the cavity; sprinkle with salt to disinfect the inside of the turkey. Rinse out the salt thoroughly with cold water. Pat dry. Place the clean turkey into a turkey pan or disposable aluminum roasting pans. Set aside.
