Easy! Crispy! Fluffy!  

Luke Storm and I made these one luxurious morning. I had been searching for pancakes that get crispy on the outside and fluffy on the inside... these did the trick.

1 cup milk

3 tbsp salted butter

2 large eggs

1.5 cups flour

2.5 tsp baking powder

Melt the butter into the milk and let it cool. Sift the dry ingredients together into a big mixing bowl. Beat the eggs and mix them with the milk/butter. Gently stir the liquids into the mixing bowl, taking care not to stir too much. There's your batter! Now make pancakes with plenty of butter on medium heat. We had good results.
