1 recipe shortcrust pastry
3/4 cup goat cheese
1/2 cup grated parmesan cheese
3 tablespoons heavy cream
1/3 cup crumbled blue cheese (any kind works)
Preheat oven to 350°F. Roll out shortcrust pastry. Press into a 9" tart pan. Bake for 10 minutes. It might puff up a bit or slip down on the sides. Don't worry. You can always press it back in.
In a standing mixer (or by hand), mix until smooth the goat cheese, parmesan cheese, egg, heavy cream, salt, and pepper. Pour cheese mixture into parbaked shell. Top with fig halves. Crumble over the blue cheese. Bake until cheese base is set and figs and nicely browned. Drizzle honey all over the top. Serve immediately or at room temperature. Don't serve cold.
