2 dozen crushed Ritz Crackers

parsley, finely chopped (a lot)

1 onion, chopped

2 cloves garlic, pressed or finely chopped

1 lb. ground chuck

1/3 lb. ground veal

1/3 lb. ground pork

1/3 lb. sausage meat

1 to 2 eggs

1 1/2 cups milk

1 cup sour cream

pinch thyme

salt and pepper

dash Worcestershire sauce

4 slices bacon

Set oven to 375°F.

Crush crackers with rolling pin or in a Cuisinart or blender. Place the crackers in a large bowl or in a mixer. Add the parsley, onion, garlic, meats, eggs, sour cream, thyme, salt, pepper, and Worcestershire.

Mix gently by hand or use dough hook if using a mixer. Add enough milk to make a runny mixture that will just barely keep a shape in the loaf pan.

Divide mixture between 2 loaf pans. Cut bacon slice in half and lay 4 halves crosswise on top of each meatloaf.

Bake for 1 hour or until done.

Makes 2 loaves, each serving 4-6 people. Extra loaf may be carefully wrapped and frozen. Thaw completely before cooking as above.
