Eating the Paleo Diet Way

If you follow a strict Paleo Diet way of eating, you can run the risk of getting bored with the food you can choose and cook or prepare with. With a bit of thought though, you will fund it is quite bearable and even very yummy at times, well it is mostly, it's great when you taste buds adjust to the new food you are consuming.

 Some Simple Paleo Meals 


I'm striving for easy preparation, few ingredients, few dishes and easy to make or cook!

 Slowed Cooked Lamb Shanks 


I have made this Recipe as simple as I can I hope you enjoy it as much as I do, Slowed Cooked Lamb Shanks, lovely!

Ingredients
4 x Lamb Shanks, or less if you can't fit four into your slow cooker
2 x Medium to Large Brown Onions, sliced fine
2 x Carrots
4 x Pieces of Diced Size Celery
***ml Beef Stock
1 x Clove of Garlic, (I use Garlic Paste)
1 x 440gram Can of Chopped or Diced Tomatoes
2 x Bayleaves

Optional
Finely Chopped Kale or the Leaves off the Celery Stalks

 Grilled Salmon with Salad 


This is a very simple meal to make, you're probably doing it already

Ingredients

One 200-250 gram piece of Salmon, "skin on"

Salad Ingredients

Lettuce,  cut or rip with hands desired amount
Tomatoes, cut into quarters or finer
Salad or Red Onion, cut finely
Celery, cut smallish
Beetroot, canned

Grilled Salmon and Simple Salad

 Sautéed Tuscan Cabbage (Kale) 


It is also known as Tuscan kale, Tuscan cabbage, Italian kale, Dinosaur kale, cavolo nero, black kale, flat back cabbage, palm tree kale, or black Tuscan palm.

2 Brown Onions, sliced thinly
2 tablespoons of Olive oil
2 Garlic cloves, thinly sliced
2 tsp Fennel seeds
2 bunches Tuscan Cabbage, coarsely shredded
250ml Water (1 cup)
tablespoons of White Balsamic Vinegar

Method

Heat the oil in a large frying pan over medium heat. Add the onion, garlic and fennel seeds, and cook, stirring often, for five minutes or until the onion is soft but not brown.

Stir in the cabbage. Add half the water. Cover and cook, stirring once, for six minutes. Add the remaining water. Cook, covered, stirring once, for a further six minutes or until the cabbage is tender.

Add a little salt and pepper to suit your taste. Stir in the vinegar to serve.
