Homemade Potato Chips


Potatoes, thoroughly washed
Oil (whatever you like best for frying)
Sea Salt

Cut potatoes into even slices using a knife, slicer, or mandolin. Fill a large bowl with very cold water and let the potato slices soak in the water for 10-30 minutes, stirring occasionally. Once they are done soaking, rinse them off and lay out in a single layer on towels (kitchen or paper) to dry. Grab another towel to dry the tops of the slices. Meanwhile, pour 2-3 inches of oil into a large pot or pan. Heat the oil to 350 degrees. Add potato slices to the oil in a few small batches, being careful not to overcrowd them. Let them fry for about 3 minutes, until golden brown. Remove to paper towels to soak up excess oil. Immediately sprinkle with some sea salt. You can eat them right away, or wait at least 10 minutes for them to get nice and crispy. They crisp up the longer you wait. Enjoy!
