3 cups tomatoes pureed
1 can (4 oz) tomato paste
1 Tbsp Italian Seasoning
1/4 tsp black pepper
3 cloves garlic
1/4 cup onion (I used green onion)
1 Tbsp Olive Oil
1 cup veggies (carrots, bell pepper, celery, spinach, etc)
In a medium to large saucepan, saute garlic and onion (as well as veggies if using) in olive oil until tender.
Add pureed tomatoes, tomato paste, add 1 Tbsp Italian Seasoning, 1/4 tsp black pepper, and 1 tsp sugar.
Let simmer for at least 1/2 hour to allow the flavors to combine.
