Oreo Truffles

2 cups White Chocolate Chips (12 oz package)
1 package Oreos
8 oz Cream Cheese, Softened

Crush Oreos in your food processor. The end result should still be fine crumbs, but the filling will give it a clumpy, sticky look. (I split the cookies into two batches and took the filling out of one batch and left the filling in the other.  The batch with the filling removed was slightly less sweet than the filling ones.  They were also harder to shape into balls.  Both were absolutely wonderful though.)

Beat cream cheese and cookie crumbs together until smooth. I finished mixing these with my hands to make sure the cream cheese was completely mixed in.  Cover the bowl with plastic wrap and place in the fridge for 20-40 minutes.

Roll the mixture into balls using 1/2 Tbsp for each ball. Place in the fridge for 20-40 more minutes. Meanwhile, melt the white chocolate chips in the microwave or a double boiler. (If using microwave, microwave for 30 seconds and stir.  Microwave in 20 second increments until all pieces are melted and there are no chunks left.)

Remove the balls from the fridge. Dip each one into the white chocolate to coat.  Place onto wax paper and cool in fridge until set.

You can top the truffles with cookie crumbs (reserved), or with melted milk or semi-sweet chocolate, or leave plain.
