Lemon Parmesan Orzo

2 cups orzo pasta
1/2 cup parsley
1/2 cup green onion
1/8 cup mint
3/4 cup Parmesan
2 tbsp butter
2 tsp lemon zest
1/2 tsp salt
1/2 tsp f pepper

Put a large pot of salted water on the stove and bring to a boil.
Add the orzo and cook for 12 to 15 minutes.
While the water comes to a boil and the orzo cooks, finely chop the parsley, green onions, and mint. Also grate the Parmesan and zest the lemon.
When the orzo is almost read, melt the butter. When the orzo is ready, strain and add the orzo to a serving bowl, then add the parsley, mint, green onions, Parmesan, lemon zest, salt, pepper and butter.

Mix and serve immediately.
